heal.abstract	Αντικείμενο μελέτης της παρούσας διπλωματικής εργασίας αποτελεί η υλοποίηση ενός έργου εφαρμογής του ERP συστήματος SAP Business One σε εμπορική και παραγωγική εταιρεία η οποία δραστηριοποιείται στο χώρο του καφέ και κατά κύριο λόγο στον κλάδο HO.RE.CA. Πιο συγκεκριμένα, αναπτύσσεται και παρουσιάζεται η διαδικασία καταγραφής των επιχειρησιακών διαδικασιών της εταιρείας, η μοντελοποίησης αυτών και η παρουσίαση του τρόπου μεταφοράς τους μέσα στο σύστημα και τις λειτουργικότητες του SAP Business One. Ουσιαστικά παρουσιάζεται το δεύτερο στάδιο ενός έργου υλοποίησης ERP συστήματος, αυτό της “Ανάλυσης των διαδικασιών και Απαιτήσεων και της δημιουργίας των Business Blueprint του έργου”. Η διαδικασία καταγραφής των επιχειρησιακών διαδικασιών περιλάμβανε μια σειρά από επισκέψεις και συνεντεύξεις με τους κύριους χρήστες (Key Users) κάθε τμήματος της εταιρείας. Κατά την διάρκεια των συνεντεύξεων αυτών αναλύθηκε ο τρόπος λειτουργίας κάθε τμήματος με το παρόν ERP σύστημα και καταγράφηκε η καθημερινή εργασία των χρηστών. Επιπλέον έγιναν φανερά τα προβλήματα που υπήρχαν και περιόριζαν την λειτουργία της εταιρείας καθώς και ο τρόπος με τον οποίο η εταιρεία θα ήθελε να λειτουργεί στο άμεσο μέλλον με βάση κάποια στοιχεία τα οποία επιθυμεί να καλύπτει το νέο ERP σύστημα αλλά και την εισαγωγή ροών εργασιών και διαδικασιών στο SAP Business One, τα οποία στην παρούσα κατάσταση κρατούνται εξωσυστημικά από το παρόν ERP. Με το πέρας της καταγραφής των διαδικασιών, πραγματοποιήθηκε η μοντελοποίηση αυτών, με τη χρήση διαγραμμάτων ΒPMN (Business Process Model and Notation), και η εισαγωγή τους στο SAP Business One με σκοπό να παρουσιάσουν, με την μορφή των Business Blueprints, στην εταιρεία τον τρόπο με τον οποίο θα εκτελούνται οι εργασίες τους μέσα από το νέο ERP σύστημα που θα εγκαταστήσουν και να βρεθούν πιθανά σημεία στα οποία δεν καλύπτονται στο μέγιστο οι ανάγκες της εταιρείας και χρειάζεται περεταίρω παραμετροποίηση το σύστημα.	el
heal.abstract	The subject of this diploma thesis is the implementation of a SAP Business One ERP project in a commercial and productive company that operates in the area of coffee and mainly in the HO.RE.CA industry. More specifically, the procedure of recording the company’s business processes, modeling them and presenting the way that these processes can be implemented through SAP Business One’s functionality is being developed and presented in this diploma thesis. Essentially, this essay presents the second stage of an ERP system implementation project, that of “Analysis of Processes and Requirements and the Compose of the Business Blueprints of the project”. The business process recording procedure included a series of visits and interviews with the key users of each department of the company. During these interviews, the way of operation of each company’s department, with the present ERP system, was analyzed and the daily work of the end users was recorded. Moreover, the problems that exist and limit the function of the company become obviously as well as the way that the company would like to run in the near future. This desire is about some requirements that the new ERP system should cover and the need of import significant business workflows and processes in SAP Business One, which with the current state are held out of the ERP system. At the end of the process recording, the modeling of them was made with the use of BPMN (Business Process Model and Notation) as well as the transit of them into SAP Business One. This happened in order to present the Business Blueprints in the company and to perform the way that they will be working through the new ERP system, SAP Business One. Also with this analysis, the company could point out specific points in where the needs of the company are not fully covered and the system needs further parameterization.	en
