heal.abstract	Τα γαλακτοκομικά προϊόντα έχουν εξέχουσα θέση στις διατροφικές συνήθειες του ελληνικού πληθυσμού. Σε αυτό το πλαίσιο, η παρούσα εργασία αποσκοπεί στο να παρουσιάσει και να αναλύσει το συνεταιρισμό «ΘΕΣγάλα», το μεγαλύτερο παραγωγικό συνεταιρισμό αγελαδινού γάλακτος στη χώρα μας, σε επίπεδο διάρθρωσης και δραστηριοποίησης στο χώρο των γαλακτοκομικών προϊόντων. Για τις ανάγκες της διπλωματικής εργασίας εξετάστηκαν και αναλύθηκαν οι οικονομικές συνθήκες και οι τάσεις ζήτησης που επικρατούν στον τομέα των γαλακτοκομικών προϊόντων, σε επίπεδο εγχώριας αγοράς. Διερευνήθηκαν οι παράγοντες που επηρεάζουν τη ζήτηση και την προσφορά των γαλακτοκομικών προϊόντων, καθώς και οι κίνδυνοι, οι απειλές αλλά και οι ευκαιρίες που εντοπίζονται στις επιχειρήσεις που δραστηριοποιούνται στον κλάδο της γαλακτοκομίας. Επιπλέον, γίνεται αναφορά στην εισαγωγή γαλακτοκομικών προϊόντων και προβάλλονται οι διαφορές στον τρόπο παραγωγής και διάθεσης των γαλακτοκομικών προϊόντων ανάμεσα στις μικρές και στις μεγάλες επιχειρήσεις. Για την ανάλυση του συνεταιρισμού «ΘΕΣγάλα», πραγματοποιήθηκαν ημι-δομημένες σε βάθος προσωπικές συνεντεύξεις με εκπροσώπους και μέλη του συνεταιρισμού. Βασικό στόχο της εργασίας αποτέλεσε η ανάλυση του τρόπου διάθεσης των προϊόντων του συνεταιρισμού μέσω της καινοτόμου ιδέας των αυτόματων σημείων πώλησης. Επίσης, εξετάστηκαν τα οφέλη που ανακύπτουν για τους παραγωγούς με τη συμμετοχή τους στο συνεταιρισμό. Τέλος, διερευνήθηκαν και παρουσιάζονται οι στόχοι που έχουν θέσει τα μέλη του συνεταιρισμού για την εδραίωση τους στην αγορά στα επόμενα χρόνια.	el
heal.abstract	Dairy products have a prominent place in the dietary habits of the Greek population. In this context, the present thesis aims at presenting and analyzing the "THESgala" cooperative, the largest producer of bovine milk in Greece, in terms of structure and activity in the dairy products sector. The thesis explores the economic conditions and tendencies of the dairy sector at the domestic level. Furthermore, the factors influencing the demand and supply of dairy products, as well as the risks, threats and opportunities identified in the sector, were investigated. In addition, the thesis refers to the role of imports of dairy products and the way in which they contribute to the domestic production. Finally, differences in the production and distribution process of dairy products between small and large enterprises are discussed. As regards the analysis of the “THESgala” semi-structured personal interviews were conducted with representatives and members of the cooperative. The main objective of the survey was to analyze the way the cooperative’s products are made available through the innovative idea of automatic points of sale. What is more, it examines the producers’ benefits derived from their participation in the cooperative. Finally, the thesis studies and presents the targets that the members of the cooperative have set, in order to establish themselves in the market for the next several years.	en
