The transport properties of foods - rheological, heat, and mass transfer data - are essential in the design and efficient operation of food processes and processing equipment. The transport properties of gases and liquids can be measured and predicted with a high degree of accuracy. However, in solids, semi-solids, and colloids, like foods materials, theoretical prediction of the engineering properties is not possible. This paper discusses the importance of transport properties in food processing, and presents some typical data, based mostly on research and pilot-plant experience in fruit and vegetable processing. |
