heal.abstract	Η εργασία αυτή έχει θέμα την αειφόρο ανάπτυξη στα ξενοδοχεία και ιδιαίτερα στις μεγάλες ξενοδοχειακές μονάδες σε τουριστικές περιοχές. Αποτελείται από δύο μέρη. Στο πρώτο μέρος παρουσιάζεται η έννοια της αειφορίας, η ιστορία, η εξέλιξή της και οι οργανισμοί που ασχολούνται με το θέμα διεθνώς. Επίσης παρουσιάζονται οι τύποι και οι οργανισμοί πιστοποίησης ξενοδοχείων ως προς την αειφορία καθώς και παραδείγματα καλών πρακτικών. Το δεύτερο μέρος είναι μία Αναφορά Αειφορίας για το ξενοδοχείο Sunwing Resort & Spa Kallithea της Ρόδου. Η αναφορά συντάχθηκε σε συνεργασία με την εταιρία και αποσκοπεί στη βελτίωση των πρακτικών που χρησιμοποιούνται αλλά και στην παρουσίασή τους προς τα ενδιαφερόμενα μέρη. Παρουσιάζονται στοιχεία για την περιβαλλοντική, κοινωνική και οικονομική πολιτική της εταιρίας στα πρότυπα του Global Reporting Initiative G4. Τέλος σχολιάζεται το αποτέλεσμα και οι παρατηρήσεις που προέκυψαν.	el
heal.abstract	The subject of this paper is sustainability in hotels and especially in popular tourist destinations. It is divided in two parts. The first part presents the concept of sustainability, its history, evolution and the organizations dealing with the issue internationally. It also presents the types of certification and the bodies that award sustainability certification for hotels. Finally it presents some examples of best practices. The second part is a Sustainability Report for Sunwing Resort & Spa Kallithea in Rhodes. This report was prepared in cooperation with the company and aims to improve the practices used while presenting its actions to stakeholders and customers. Data are presented for the environmental, social and economic policy of the company to the standards of Global Reporting Initiative G4. Finally the results are evaluated and the observations that came up are commented.	en
