heal.abstract	Η παρούσα διπλωματική μελετά τη δημιουργία ενός σύγχρονου οινοποιείου ως κομμάτι μιας περιήγησης από το παλιό στο νέο. Η οινοποιητική μονάδα με τους κατάλληλους τεχνολογικούς εξοπλισμούς και μηχανήματα για την παραγωγή κρασιού, σχεδιάζεται αξιοποιώντας τα πλεονεκτήματα που προσφέρει η ίδια η φύση. Βασική αρχή σχεδιασμού αποτελεί το βαρυτικό σύστημα (gravity flow system), δηλαδή η μεταφορά του προϊόντος μεταξύ των σταδίων οινοποίησης με τη δύναμη της βαρύτητας και όχι με μηχανικό τρόπο που προκαλεί καταπονήσεις, προσφέροντας στον παραγωγό ποιοτικούς οίνους. Η και ο βορεινός προσανατολισμός προσφέρουν επιπλέον πλεονεκτήματα για τον χώρο της οινοποίησης και δημιουργούν τις κατάλληλες συνθήκες σε σταθερό ηλιασμό, αερισμό, υγρασία ανάλογα με τις απαιτήσεις του κάθε σταδίου. Επιπλέον υπάρχει πρόβλεψη για τη συλλογή των βρόχινων νερών (μέσω του στεγάστρου) απαραίτητο στοιχείο για την καθαριότητα του χώρου λόγω των αυξημένων αποβλήτων που παράγονται. Το ογκοπλαστικό αποτέλεσμα και η χρήση των υλικών αποτελούν μια σύγχρονη προσέγγιση της παραδοσιακής αρχιτεκτονικής. Η επιλογή της τοποθεσίας εξυπηρετεί τις ορεινές καλλιέργειες και ταυτόχρονα στοχεύει στην ανάδειξη της βιομηχανικής κληρονομιάς του τόπου, προσεγγίζοντας ένα οινοποιείο του 1930, ένα από τα πρώτα του νησιού. Μια διαδρομή δίνει τη δυνατότητα στον επισκέπτη να ανακαλύψει τις μεθόδους οινοποίησης διαχρονικά, αλλά και να έρθει σε επαφή με την ιστορία του τόπου. Ο υπαίθριος χώρος του παλιού οινοποιείου διαμορφώνεται με χώρο εκδηλώσεων και πλατεία για τον διπλανό οικισμό της Εξάνθειας.	el
heal.abstract	This thesis is studying the creation of a modern winery as part of a tour from the old to the new. The winemaking unit, which has the appropriate technological equipment and machinery for the production of wine, is designed by exploiting the advantages offered by nature itself. A key design principle is the gravitational system (gravity flow system), meaning the transfer of the product between the winemaking stages with the force of gravity and not mechanically, which caused stresses, allowing the producer to make quality wines. The mountain slope and the northerly orientation offer additional advantages for the wine making unit and create the appropriate conditions at a stable insolation, ventilation, and humidity, depending on the requirements of each stage. In addition there is provision for the collection of rainwater (through the roof) an essential element for the cleanliness of the space due to increased waste produced. The morphological result and the use of materials represent a modern approach to traditional architecture. The choice of location serves the highland crops and also aims at promoting industrial heritage, by being at a short distance of a winery dating back to 1930, one of the first on the island of Lefkada. A path allows the visitor to discover the winemaking methods over time and come into contact with the history of the place. The outdoors of the old winery is designed with an event space and a square for the use of the village of Exanthia.	en
