heal.abstract	Η παρούσα διπλωματική εργασία, έχει ως αντικείμενο μελέτης την εξέλιξη της Βιομηχανίας Τροφίμων του εγχώριου Μεταποιητικού κλάδου. Σκοπός της εργασίας είναι να αποτυπωθούν οι τάσεις του εγχώριου τομέα Τροφίμων και Ποτών και να μελετηθούν οι προοπτικές του μέσα από τεκμηριωμένη ανάλυση βασικών χαρακτηριστικών του. Αρχικά, για να αξιολογηθεί η θέση της Βιομηχανίας Τροφίμων στο σύνολο της ελληνικής Μεταποίησης, έγινε ανάλυση βασικών διαρθρωτικών δεικτών που αφορούν τον Κύκλο Εργασιών, την Απασχόληση, το Εξωτερικό Εμπόριο κ.α., ενώ πολλοί από αυτούς τους διαρθρωτικούς δείκτες μελετήθηκαν παράλληλα με τους αντίστοιχους ευρωπαϊκούς με σκοπό τη σύγκριση μεταξύ εγχώριου και ευρωπαϊκού κλάδου. Στη συνέχεια, ακολούθησε χρηματοοικονομική ανάλυση αξιοποιώντας τους ισολογισμούς των εταιριών της Βιομηχανίας Τροφίμων στη χρονική περίοδο 2005-2015 έτσι ώστε να αξιολογηθούν και οι επιπτώσεις της οικονομικής κρίσης στον κλάδο. Επιπλέον, έγινε στατιστική ανάλυση των αποτελεσμάτων έρευνας που διεξήχθη από το Εργαστήριο Βιομηχανικής και Ενεργειακής Οικονομίας (ΕΒΕΟ) του ΕΜΠ στις μεγαλύτερες επιχειρήσεις του Μεταποιητικού Κλάδου, ώστε να εξαχθεί η στρατηγική ταυτότητα των επιχειρήσεων σε όρους Επιχειρηματικής Στρατηγικής, Οικονομικών Επιδόσεων, Ανθρώπινου Δυναμικού κ.α. Τέλος, αναγνωρίστηκαν οι προκλήσεις που καλείται να αντιμετωπίσει η εγχώρια Βιομηχανία Τροφίμων με βάση τις διεθνείς εξελίξεις, ενώ η εργασία ολοκληρώνεται με τα συμπεράσματα.	el
heal.abstract	The present diploma thesis focuses on the development of the Greek Food and Beverage Industries. The aim of this thesis is to present the trends of these Industries as well as to study their prospects through a documented analysis of several key features. Firstly, an analysis of the Greek Manufacturing Industry was introduced, based on the construction of structural indicators related to Turnover, Employment, International Trade etc. The empirical findings were used both in the evaluation of the performance of the Food sector compared with the rest of the Manufacturing Industry as well as in the comparative assessment between the Greek and European sector. Through the consolidated financial statements from the Food sector enterprises, the impact of the domestic economic crisis on its performance during the 2005-2015 period was evaluated. Moreover, the strategic identity of the enterprises in terms of Business Strategy, Economic Performance, Human Resource Management etc. was captured by the implementation of statistical processing on the empirical findings of a relative field research on the largest enterprises of the Greek Manufacturing Industry, conducted by the Laboratory of Industrial and Energy Economics (LIEE) of the NTUA. To conclude, this thesis identifies the challenges to be met by the Greek Food and Beverage Industries in their efforts to compete at a globalized environment.
