heal.abstract	Επιθυμώντας κάποιος να έρθει σε επαφή με τον πολιτισμό ενός τόπου, είναι σημαντικό να ανακαλύψει και τις γαστρονομικές του συνήθειες. Μία από τις βάσεις της τοπικής γαστρονομίας είναι η καλλιέργεια, η οποία με τη σειρά της καθορίζεται από το έδαφος, το κλίμα και την ανθρώπινη ενασχόληση και αγωνία. Μέσα από αυτή τη συνθήκη, θέλησα να προσφέρω στον επισκέπτη της Τήνου, τον τόπο καταγωγής μου, τα μέσα για μια περαιτέρω προσέγγιση του νησιού. Μία προσέγγιση στα πλαίσια του εναλλακτικού τουρισμού, ο οποίος στοχεύει στην αληθινή γνωριμία του τόπου προορισμού από τον ταξιδιώτη, μέσω της συμμετοχής και εμπειρίας των τοπικών αξιών και δραστηριοτήτων. Έτσι, αυτή η εργασία πραγματεύεται την ανάπτυξη ενός εκπαιδευτικού κέντρου γαστρονομίας με επίκεντρο την καλλιέργεια, στη χώρα της Τήνου. Ένα κέντρο που νοηματικά στέκεται ανάμεσα στους δύο μεγάλους πόλους του νησιού. Από τη μία, την εκκλησία της Παναγίας στη χώρα και από την άλλη, τη σχολή και μουσείο μαρμαροτεχνίας στον Πύργο. Ακόμη, το κέντρο αναπτύσσεται στο δυτικό όριο της πόλης, περιοχή που είναι υπό ανάπτυξη και σε μικρή απόσταση από το λιμάνι. Δηλαδή, βρίσκεται στο όριο πόλης - ενδοχώρας, λειτουργώντας ως ενδιάμεσος σταθμός στην πορεία των αγαθών από την ύπαιθρο προς την πόλη.	el
heal.abstract	When someone desires to come close to the culture of a place, one of the things they need to discover is its people’s gastronomic habits. Agriculture is one of the foundations of local gastronomy and it is defined by the terrain, the climate and of course human activity. Having this as a given, I desired that the visitor of Tinos island, my place of origin, would be given the means for a better approach of local culture. An alternative tourism approach, which aims to provide the traveller with a true knowledge of the place of destination, through the involvement and experience of local values and activities. Therefore, this thesis is about the development of a centre for the promotion and education of gastronomy in the town of Tinos, focusing on agriculture. This centre conceptually stands between the two strong poles of the island. In one hand, there is the Church of Virgin Mary, famous throughout Greece, and on the other hand the School and Museum of Marble in Pyrgos. Furthermore, the educational centre is located at the western outskirts of the town, an area under development and also near the port of Tinos. In other words, it lies on the boundary between the town and the hinterland of the island, operating as an intermediate station in the route of rural goods to the town.	en
