heal.abstract	Στο σύγχρονο και πολύ έντονα μεταβαλλόμενο επιχειρηματικό κόσμο η σημασία των προβλέψεων είναι ζωτικής σημασίας για όλες τις επιχειρήσεις. Οι προβλέψεις χρησιμοποιούνται από τα στελέχη όλων των επιχειρήσεων και μπορεί να βασίζονται είτε σε ποιοτικές είτε σε ποσοτικές μεθόδους και αφορούν όλα τα τμήματα της επιχείρησης. H σωστή αξιοποίηση των δεδομένων δίνει σημαντικό ανταγωνιστικό πλεονέκτημα στις εταιρίες. Έτσι αναπτύσσονται ολοένα και περισσότερα εργαλεία τα οποία υποστηρίζουν τη συγκεκριμένη ανάγκη. Μία τέτοια πολύ σημαντική ανάγκη πρόβλεψης προκύπτει στις εταιρίες όσον αφορά τις πωλήσεις δηλαδή τη ζήτηση των προïόντων τους βραχυπρόθεσμα και μακροπρόθεσμα. Στόχος της παρούσας διπλωματικής είναι αρχικά να αναλύσει σε θεωρητικό επίπεδο τις έννοιες που σχετίζονται με την πρόβλεψη της ζήτησης και τη διαχείριση των αποθεμάτων, όχι μόνο των τελικών προϊόντων αλλά και των πρώτων και βοηθητικών υλών. Στη συνέχεια πραγματοποιείται μία μελέτη περίπτωσης αξιοποιώντας στοιχεία από μία ελληνική βιομηχανία τροφίμων. Σύμφωνα με τα διαθέσιμα δεδομένα γίνεται πρόβλεψη της ζήτησης μίας κατηγορίας των τελικών προϊόντων της επιχείρησης και εν συνεχεία διαμορφώνεται το πλάνο παραγωγής και καθορίζονται τα αποθέματα των πρώτων και βοηθητικών υλών. Τα αποτελέσματα δείχνουν ότι το είδος της ζήτησης καθώς και το πλήθος των δεδομένων είναι καθοριστικής σημασίας για τη μέθοδο πρόβλεψης που θα επιλεχθεί	el
heal.abstract	In the modern and very rapidly changing business world the importance of forecasting is vital for all kind of businesses. Forecasting methods (qualitative or quantitative) are used by the executives of every company and concern all the departments of the company. Undoubtedly, the correct use of data provides a significant competitive advantage to the companies. Thus, many tools are being developed to support this need that arises, among others, from the necessity of predicting sales, i.e. the demand of the various products, both in the short- and the long-term. The scope of this thesis is initially to analyse at a theoretical level the concepts related to the forecasting methods and to the stock management of final products and raw materials. Secondly, a case study concerning a Greek food industry is analysed. According to the available data, the final demand is predicted at a product category level. Then, the production plan is formulated and the stock level of the final products and raw materials is determined. The last part of the thesis presents the results of the case study and highlights its main conclusions. It is found that the type of the demand and the availability of historical data are critical factors for selecting the most appropriate forecasting method.	en
